This lot comes from world-renowned processing innovator Diego Bermudez in Cauca, Colombia. Using his signature thermal shock washed method, the coffee undergoes highly controlled fermentation followed by a temperature-regulated rinse to lock in specific flavour compounds. This scientific approach results in an intensely fruited and vibrant profile, characterised by deep notes of red plum and raspberry with a concentrated, jam-like sweetness.
