Hailing from the high-altitude Bombe region of Sidama, Ethiopia, this lot lives up to its name with a vibrant, explosive aromatic profile. The coffee undergoes a delicate white honey process, where a portion of the fruit mucilage is left on the bean during drying. This technique acts as a flavor developer, amplifying the natural sweetness and silkiness of the cup without masking the inherent floral clarity of the heirloom varieties. The resulting profile is luminous and energetic, featuring a striking tartness reminiscent of cranberry and cherry, rounded out by an elegant hibiscus floral finish and a persistent, fresh sweetness.
