El Filo is a high-altitude lot produced by second-generation grower Francisco Loaiza in the Alto de Naranjal area of Nariño. Perched at 2050 meters, the farm benefits from a unique microclimate characterized by extreme dryness and low humidity during harvest, which allows for very stable drying conditions. Francisco employs a double-fermentation washed process: cherries are floated for quality, fermented whole for 24 hours, and then fermented for an additional 48 hours after de-pulping. This meticulous technique, combined with the volcanic soils of the region, results in a remarkably juicy cup with deep blackcurrant acidity, the soft sweetness of pear, and a refined silky mouthfeel.
