ONA Coffee - Finca Licho
Tasting Notes: Apricot, Black Tea, Orange.
Produced by first-generation grower Mario Gonzalez at Finca Los Suyates, this lot represents the high-altitude potential of the Dipilto region in Nueva Segovia. Originally a timber plantation, the farm was converted into a shaded agroforestry environment in 2006, utilizing native vegetation to support soil health. This coffee features the Parainema variety, a Sarchi-hybrid known for its resilience and complex cup quality. The anaerobic washed process involves fermenting ripe cherries in sealed, oxygen-free tanks before depulping and washing, a method that enhances aromatic intensity while maintaining a clean structure. The resulting cup is highly tea-like and stone fruit-forward, characterized by sweet notes of apricot and orange with a refined black tea finish.
