Lot Isabel comes from La Cima del Cielo, a high-altitude farm in the El Cedral area of Santa Bárbara, owned and operated by Pedro Erazo. Situated at 1580 meters above sea level, the farm’s cool, mountainous environment slows cherry maturation, resulting in denser beans with enhanced flavor complexity. Pedro, who transitioned from growing mixed fruit trees to specialty coffee, developed La Cima del Cielo specifically to prioritize quality-driven production. This lot features the Pacas variety, which is well-suited to the farm’s steep terrain. The cherries were hand-picked and fermented in controlled tanks to ensure a clean profile, producing an espresso with crisp acidity, sweet orange notes, and a distinct nutty character reminiscent of hazelnut.
