The cherries undergo a 36-hour oxidation, a 50°C hot water wash to create a thermal shock, and a 72-hour yeast fermentation, before a final 5°C cold wash to seal the flavors. The resulting cup is refined and floral, featuring soft notes of apricot and vanilla with an elegant violet aroma.
